SAVOURY RICE
Ingredients
- 1½ cups long-grain parboiled rice
- 2 tbsp oil
- 1 medium onion (diced)
- 1½ tbsp spice for rice
- ¾ tsp salt
- 3¼ cups water
- 1 medium carrot (diced)
- ½ green pepper (diced)
- ½ red pepper (diced)
Instructions
- Heat a tbsp of oil and fry the diced carrots, onion and peppers for about 6 mins, OR you can fry the onions only and saute the peppers and carrots on the side when the rice is almost done
- Add the rice spice and salt and mix well and let cook for about 5 mins to give the rice a little toast and develop flavours
- Pour the water/stock, close and cook until all the liquid is absorbed
- Before fluffing the rice add the sauteed veggies, fluffy mixing in the peppers and carrots and serve
