Farm Baked Salmon with Sweet Potatoes (Recovery Dinner)
Ingredients
- 180g salmon fillet
- 1 medium sweet potato (cubed)
- 1/2 cup broccoli or green beans
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt & black pepper
- 1/2 teaspoon dried herbs (optional)
Instructions
- Preheat oven to 200°C (390°F).
- Toss sweet potatoes with olive oil and roast for 10 minutes.
- Add salmon and vegetables to the tray.
- Season and drizzle lemon juice over salmon.
- Bake 12–15 minutes until salmon is cooked through.
- Serve warm.
